According to Portland Food Map, Garry Bowcott and chef Nicholas Nappi of Local 188 are seeking space in Portland for a new restaurant. "The concept is a 're-imagining of the classic soda fountain'," the blog reports, with Jay Villani — owner of Local 188, Sonny's, and Salvage BBQ, with stake in Bunker Brewing Company — and real estate agent Joe Malone involved in the search.
Between places like Waltz Soda Fountain in Damariscotta and The Goldenrod in York Beach, the state does have some classic examples of the concept, while Portland has a modern take on the style in Vena's Fizz House, which recently added alcohol to the menu. Add to that the proliferation of renowned eateries like Central Provisions and Duckfat with house-made sodas on the menu, and this seems like a theme that has legs.
