New bistro Custom Deluxe quietly opened in Biddeford last week. The petite 800-square-foot restaurant at 140 Main St. is the work of chef Thomas Malz and fiancée Megan McVey. Malz is a Culinary Institute of America graduate with an extensive resume from Cochon in New Orleans to Kapnos in Washington, D.C., and McVey's expertise lies in front-of-house relations.
The menu at Custom Deluxe pulls from French cuisine, New England favorites, and new American sensibilities (a little bit of this, a little bit of that). Chicken noodle soup is listed next to Moules à la Normandie. Malz told Journal Tribune that he hopes the restaurant will "become a staple in the downtown area."
Custom Deluxe is open Tuesday through Saturday, from 3:00 p.m. to 9:30 p.m.
