Mothers and Thieves Introducing Exotic Ingredients to Hyper-Local Vinland Tomorrow

A former sous chef will host two pop-up seatings March 31.

A former Vinland employee returns to the restaurant tomorrow for a pop-up dinner. Ryan Quigley — former sous chef, now at Boston's Puritan and Company — and Tavis Potter — a pastry intern at Boston's Harvest Restaurant — are Mothers and Thieves, named after what they believe are the best and worst guests at a dinner party, respectively. There will be a four course tasting menu available for $40 at 6 p.m. and a seven course menu for $70 at 8 p.m., with limited family-style seating still available.

"Putting yourself into a box" of using local ingredients above all else "really pushes you to innovate," Quigley said of his time in Vinland's kitchen. But the 29 year old sous chef also took opportunities to let his mind wander. "I would write in little side notes of other ingredients that would work, little scribbles of 'pomelo' or 'tamarind' that would pair well with the immaculate day boat scallops we had just received," he explained.
