Tandem Coffee + Bakery opened yesterday, and it was hopping from the start. Co-owner Kathleen Pratt said the turnout was inspiring, and much larger than expected. The bakery sold out of pastries by 2 p.m. and the team has already "begun to up [its] numbers" to try to avoid having the same thing happen so quickly. Pratt allowed, "We still have some kinks to figure out, but overall it felt amazing to be up and running and have customers hanging out in our new space!" Baker Briana Holt echoed Pratt's sentiments, saying she felt great about the day while also noting the steep learning curve. "There's so much work for me to do to get my best things out there on that awesome marble slab, and I learned a TON today about where my prep schedule needs work and which things the people are hungry for." Those who missed out on her baked goods yesterday will have another shot at them today, as she teased, "I hope everyone is pumped for more pies and maybe some spicy biscuits. Go team!"

Tandem Coffee + Bakery is at 742 Congress Street in Portland. Regular hours will be Tuesday to Friday 7 a.m. to 6 p.m., Saturday 8 a.m. to 6 p.m., and Sunday 9 a.m. to 3 p.m.
