Chad Conley, who recently reopened the Palace Diner in Biddeford with Greg Mitchell, spoke with the Press Herald on a number of topics, including how Rob Evans convinced him to skip culinary school, why Biddeford is a good fit and the benefits and challenges of running a 15-seat restaurant in a really old diner car. On that "Ladies Invited" slogan: "If we had come up with that today, it would be sleazy and weird, but it's on there already and it's perfect and fun, and people crack a smile when they see it, so we just had to use it."
