The Salt Exchange received four stars ("excellent") from John Golden in this week's Maine Sunday Telegram review. One of Golden's dining guests calls it "the most underrated restaurant in Portland," and he says there's evidence to support that claim. He has the roasted salmon with lobster-bacon potatoes and braised bok choy, all of which is "bathed in a tarragon-scented lobster broth, creating an exquisite fusion of flavors." [MST]
