David Levi, who plans to open locavore sanctuary Vinland in Portland later this year, is quoted in an interesting post on the NPR The Salt blog discussing the exodus of chefs from New York City and the difficulty elite restaurants there are having in staffing their kitchens. Levi, a New York native who cooked in Manhattan, explains why he chose Portland over the Large Apple: "Because rent is just so much lower, it just gives you a lot more freedom to not drive yourself completely crazy and take a few more risks."
