This is the brand spankin' new Hugo's tasting menu. The restaurant softly opened this week after an extensive and awesome remodel. The new tasting menu will keep alive the tradition established by former owner Rob Evans while offering customers more choices. Diners may select one course from each of the three categories, explained GM and co-owner Arlin Smith, with three other chef's-choice courses (think amuse-bouche and pre-dessert) mixed in to create an eight-course meal.
Smith, along with Andrew Taylor and Mike Wiley (all three worked at Hugo's under Evans and also co-own Eventide Oyster Co. next door), bought the restaurant from Evans and his partner Nancy Pugh in March 2012. It closed this past March for the revamp.
