The Press Herald's Maine a la Carte blog has a preview of Elsmere BBQ & Wood Grill, which is planning to open in SoPo next month. They just got their new, monster smoker shipped in from Dallas. Says co-owner Adam Powers: "We're more central Texas style. ... We're going to be more about the meat. We will use some light rubs, but the central Texas rub is generally salt and pepper, and then treat the meat right." [PPH]
