Harding Lee Smith, who plans to open Boone's Fish House & Oyster Room on the waterfront later this month, is "Portland's hardest-working chef," according to the headline of the near 4,000-word opus in the Maine Sunday Telegram profiling the chef/owner whose "mini-empire" already includes The Front Room, Grill Room and Corner Room.
