The food, atmosphere and story behind Portland's Cantina El Rayo are all part of Amy Anderson's thoughtful review in the May issue of Maine Magazine. "Some things I make are straight out of Mexico, and some things are influenced by Mexico," (chef/co-owner Cheryl Lewis) says. "There's a lot of roasting and grilling and pureeing and grinding.
