2013_5_whenpigsfly.jpgLocal sea urchin might be out of season in Maine, but SeacoastOnline's Rachel Forrest says uni still deserves our attention because it is becoming popular outside the sushi world. She saw lots of it on menus while in New York City for the James Beard Awards. It's already featured at some Maine restaurants, like When Pigs Fly in Kittery. "Sea urchin might be the new pork belly, meaning we're going to see it everywhere, although pork belly is far more accessible and less exotic for folks."—Tom Minervino [SO]
