Gather Chef Chad Conley to Re-Open Palace Diner

Chad Conley, chef at Gather in Yarmouth, has leased Biddeford's Palace Diner with a business partner and plans to re-open the 15-seat Pollard dining car in March, according to the Press Herald's Meredith Goad. Originally opened in 1927, Palace Diner is Maine's oldest diner and one of its most iconic. The diner has been closed since Sept. 1. Conley, a Portland native who has also cooked at Hugo's and Jean Georges in NYC and managed Miyake Farm, tells Goad that he will continue to serve diner fare at breakfast and lunch as the diner has always done, but will also add diner on Friday and Saturday nights. "Nobody's ever done regular dinner service there, so we're really excited to bring that to Biddeford," Conley says.

Portland Food Map posted some photos from a friends and family breakfast that Conley hosted at the diner yesterday, and provides a few more details: the diner has applied for a liquor license and will offer outdoor seating in the warmer months. Also, Gather is looking for a new head chef.
