Twenty Maine restaurants, most of them in Portland, have signed on for an initiative developed by the Gulf of Maine Research Institute to increase awareness of unfamiliar species of fish. "Out of the Blue" was created in partnership with fishermen and people in food service, including chefs Mitchell Kaldrovich from Sea Glass at Inn By The Sea and Charles Byron from The Salt Exchange.
The team identified five species to spotlight, beginning with redfish, which will show up on participating restaurant menus June 1-10. Other fish will be featured July 20-29, Sept. 28-Oct. 7, Oct. 26-Nov. 4 and a yet-undecided week in the winter. The GRMI website has the list of restaurants.
